a sudden drop in endogenous enzymes viz. amylase,
protease and lipase.

material also depresses digestion of fats,

cereals are rich in phosphorous but in unutilisable and
bound form called phytates and phytic acids. Phytates
also bind minerals like calcium, magnesium, trace minerals
and proteins thereby reduces their availability
